Winemaker Michel Aroldi was born in Libourne in 1959. He was raised near Sauveterre de Guyenne, about 30 miles outside of Bordeaux. He comes from a long line of farmers and in 1993, discovered “his terroir” in the Fronsac area, where he purchased Chateau Plain-Point.
Still not satisfied, and “attracted by the winds of the Atlantic“ he searched for and discovered Château Dompierre in Pauillac. Michel loves to mention that the ‘terroir’ is the "nicest alchemy between the earth, heaven, and men".
Vineyards: St Christoly Médoc, a parcel of gravel facing the estuary, Bégadan, parcel of gravel and clay-limestone.
Planting density: 8,500 vines / hectare.
Grape varieties: 85% Cabernet Sauvignon,15% Merlot
Cultivation of the vine: reasoned agriculture, working the soil, and deleafing and green harvest.
Harvest: Manual, using small slatted trays (10kg). Transport in refrigerated truck. Receipt of the harvest at 3 ° c. Total destemming. Optical sorting.
Vinification and Elevage: Fermentation in wooden vats, whole grains. "Native" natural yeasts. Immersed marc cap. Duration of vatting is 5 weeks. Flowing, pneumatic pressing. Aging in wooden vats for 12 months.
