From the producer: The vines are located on the highest terrace of the Tarn at an altitude of about 200m. The soils are alluvial deposits composed mainly of pebbles, gravel and silt.
Not spared at the very beginning by modern recipes for cultivation and winemaking, the estate refocused in the early 2000s on gentle cultivation techniques. The recipe is simple: Working the vines as close as possible to the terroir, without fertilizers or weedkillers, favoring natural products, harvesting a very ripe, very healthy and sorted harvest.
Winemaking
In order to respect the typicality of the terroir and the grape varieties, we only use the natural yeasts present on the skin of the grapes at the time of the harvest. Fermentation takes place in stainless steel vats, equipped with thermal control in the form of cold water runoff. Vinification is done grape variety by grape variety.
After 18 months of aging and two rackings, the wine is bottled between March and September N+2.
